HEALTHY Mac & Cheese Recipe!

If you're old enough to read this you've probably already had many servings of Mac & Cheese. I grew up with box style Kraft Mac & Cheese & when I had kids I served my boys the same. Sadly I was not living a healthy & fit lifestyle back then. I wish I would have been. Since we have changed our nutrition to include more healthy choices finding a new Mac & Cheese recipe has been on the top of my list. I have tried others & they have not been received well by my boys. I had high hopes this recipe would be a hit. They said it was "Okay"…"nothing special." So, since I like the basic recipe I felt it worthy of sharing. Next time I will dress it up with some seasonings & some planko bread crumbs.

HEALTHY MAC & CHEESE

Ingredients

  • 1 1/2 cups Skim milk (can use 1% or unsweetened almond milk)
  • 2 egg whites 
  • 2 tsp. cornstarch 
  • 8 oz 2% sharp cheddar cheese (block style & grate yourself. 1 cup is roughly 4 oz)
  • 1 box of Whole Wheat elbow macaroni

Directions

  • Preheat oven at 350
  • Cook pasta per the box directions
  • Combine remaining ingredients in a medium bowl & then pour over pasta & stir together
  • Add all ingredients into a 9 x 13 casserole dish
  • Bake uncovered until cheese is melted & bubbly

1 MONTH FREE!

I need to make a confession…well, for those of you who follow me on social media you already know, I have always had a love affair…OKAY…a full blown addiction to Diet Mt. Dew. Like a 2 liter a day addiction. NO JOKE! I used it as a HUGE crutch. It was my sweet treat. My zero calorie dessert. My stress reliever. My happy place. 

I have tried to stop drinking it & have been successful in the past…for a limited time. I have read countless articles & studies on the harm of aspartame & similar faux sweeteners on the body. I KNEW I was putting junk into my body…daily…but couldn't stop. Seriously…ask my family. If I was without it for any length of time I was a total crab…& that's putting it nicely. 

So why did decide to stop NOW? 

Simple really…I was just READY. I had it set in my mind to do it…and I AM! 

I was also sick with the flu at the end of last year for 2 full weeks. I figured that was the perfect time to make the transition. I had switched to buying cans instead of 2 liter bottles months before. All in the hopes of trying to get a grip on the amount I was drinking. So, on January 1, 2013 I had 11 cans of Diet Dew left. Being the cheap girl I am I was not about to dump it…plus the addict in me didn't want to. Just being honest.

So, I had ONE can a day for 11 days. That right there was a MASSIVE improvement for me. I increased my water during those 11 days because in the months…heck YEARS prior I would go days without drinking water. Another sad fact & one I knew was hindering my personal health & fitness goals.

As I sit here & type this blog post I am 1 month FREE from the Diet Dew addiction! I can honestly say I do not crave it at all! Which really I didn't think that would EVER happen for me. I figured I would crave it for a very long time. Also, I don't crave sweets as much as I used to. 

The one thing that I have used to make this transition "easier" for myself….USE APPS!! YES, phone apps have been a wonderful tool for me & have helped me remember what I'm doing it & to KEEP IT UP! The two I use DAILY…all day long are…

  • Calorie Counter – MyFitnessPal by MyFitnessPal, LLC

MyFitnessPal is just like the MyFitnessPal.com website you may have seen online. If you have an account with MFP the two will be linked. (Add me as a friend too TurboStaci)
It tracks your calories eaten, water intake, cardio, strength, weight & allows you to connect with your MFP friends. Support & accountability all in one. 

  • Water Your Body by NorthPark

This app tracks your water intake. It suggests drinking half your current body weight. I personally drink more since water is my drink of choice…at half my body weight I would be very thirsty It also will send you a reminder on your phone to drink up! This keeps me on my toes no matter what I'm doing or where I am.

THINK POSITIVE ~ Weekly Health Challenge

A new week means a NEW weekly health challenge. This week is about dealing with those "bumps" we all encounter on our road to better health. Halloween kicks off the beginning of HOLIDAY EATING season for most…and yes, for some it's a SEASON of indulging & mindless eating. Has that been your normal mindset year after year???

This week I challenge you to rethink the way you're going to enjoy this holiday season. I'm not saying don't enjoy Grandma's pumpkin pie that only comes out once a year…but those FUN SIZE kit-kats…yeah, those are NOT a special treat. Think about the life you want to live. If great health & better fitness is a step you need to take to create that life then it's time to re-train your brain!!

I believe that how you label yourself is exactly how you will be. My friend Chantel posted this the other day on Facebook & I LOVE it & couldn't agree more!

Whatever follows "I Am" will come true.

I am tired, I am broke, I am fat, I am a loser, I am dumb, I am not good enough.

Do you find yourself saying any of those things to yourself (or worse)? Does it happen daily? Multiple times a day???? It's time to change that thinking. LABEL YOURSELF POSITIVELY!! If you want DIFFERENT results, you need to start by THINKING DIFFERENT! If you don't THINK you can, then you can't.

GIVE ME 20….EVERY DAY for 7 DAYS!! THAT my friends is your challenge this week & I know EVERYONE can do that.

It's time to focus on MOVING MORE! The colder months are upon us & people tend to retreat to their homes & be less active. I don't want you to do that this season. So, we will start off with something I think is doable for ALL!

NO EXCUSES!!

I don't care if your 8 or 88, 100 lbs or 200 lbs overweight…we can all add more movement into our day. You don't have to be training for a marathon, or spend 2 hours a day in the gym…all I ask is for you to add movement to your day. ANY KIND OF MOVEMENT!! Walking, dancing, lifting weights, video game workouts, DVD home workouts, running, bike rides, active play with your kiddos…ANYTHING COUNTS!

Now, I will say that anything that is a NORMAL part of your day…doing laundry, your normal day job (even if physically active), normal household chores (picking up, vacuuming, dusting)…are not included. I want you to REALLY make an effort in adding more exercise to your days. Believe me, you will love the feeling of those exercise endorphins! They become very addicting.

So, I only have one question for you….ARE YOU IN???
